Who we are

At Ugly Dough Pizza, we believe beauty is overrated… but taste isn’t. Our pizzas may look imperfect, but they’re packed with flavor, fresh ingredients, and heart. We started Ugly Dough because food should be fun, messy, and shared. Come for the fun, stay for the pizza.

We’re two friends with a shared passion for food and making people smile. Our journey began in 2023 with our Thai food truck, KimJa Thai Food, bringing bold flavors and homemade recipes to our community.

Now, we’ve turned our passion to pizza. At Ugly Dough Pizza, we believe great pizza doesn’t have to look perfectβ€”just taste amazing. Every pizza is handcrafted with care, made with dough that’s fermented for nearly 60 hours for perfect texture and flavor, topped with fresh, melty cheese and bold toppings. Our pizzas might be a little messy on the outside, but that’s part of their charm.

Whether you’re enjoying a whole pizza with friends, family, or just treating yourself, our pizzas are meant to be enjoyed, not posed. Ugly on the outside, unforgettable on the insideβ€”that’s the heart of Ugly Dough Pizza.

Introduce Our Oven

People always notice the oven first.
They peek inside the truck and ask,
β€œWhat oven is that? It looks so cool!” πŸ”₯

It’s a Gozney β€” not just cool, but the reason our dough puffs up so beautifully.

The high, steady heat stone bakes at 845Β°F and up, making the dough soft, airy, and full of life.
The pizza comes out exactly the way we like it β€” perfectly puffy, light, and soft.

From Italy, Straight to Our Dough:

  Our Special Flour Blend

At Ugly Dough Pizza, we use unbleached, unbromated, unfortified flour imported from Italy β€” nothing fancy, just clean and healthy.

We actually use two types of flour, carefully blended together.
One helps the dough rise beautifully, the other keeps it soft and light.

We let the dough ferment for nearly 60 hours, giving it time to develop deep, rich flavor.
The result? Dough that puffs up naturally, stays airy, and is full of flavor in every bite.

We don’t take shortcuts.
Every pizza is soft, fluffy, and tastes just the way we like it. πŸ•

Meet the Ugly Dough Pizza team

Kim and Jaa β€” two hands, two stories, one passion for good food.

  • Kim – 50% Partner
    Kim has been in the food world for over 7 years, starting as a server and later working as a barista in a bubble tea shop, before moving on to Target. Kim’s experience and passion for food led to teaming up with Jaa to start their food truck journey.

  • Jaa – 50% Partner
    Jaa has worked in two Thai restaurants, as well as at the same bubble tea shop and Target as Kim. While running KimJa Thai Food together, Jaa faced an injury that made it difficult to cook with a wok, which uses a lot of arm strength. This challenge led Jaa and Kim to transition their passion into Ugly Dough Pizza, creating handcrafted, slow-fermented pizzas that they could make together while still bringing bold flavors to their community.
